This recipe strips away everything that might get between you and the bird. No marinades. No bacon wraps. No cream sauces. Just quail, olive oil, salt, and fire.
Simple Grilled Quail
Ingredients
As many quail as you want to eat, split
Olive oil
Kosher salt
Smoke
Instructions
Build a hot fire in a grill.
Toss the quail with olive oil and season generously with salt.
Grill until the skin is lightly charred and the meat is just cooked through, about 3 to 4 minutes per side.
That's it. Eat them with your hands like God intended.
